The perfect time to share our  easy-to-make almond flour cookies which are fun to make, gluten-free, and most importantly, freakin’ delicious!


-300 gram ground almonds

-140 gram powdered  sugar

-1,5 tsp baking powder (gluten-free)

-zest of 1 lemon

-1 egg

-pinch of salt

-jam to decorate (I used  raspberry and apricot)

-blanched and roasted almonds to decorate

Preheat oven at 180 C . Put ground almonds in a large mixing bowl and sift powdered sugar and baking powder on top. Add the egg, 2 tablespoons of lemon zest, a pinch of salt and stir untill a stiff dough. Role, with greased hands, balls of dough the size of a walnut.

Decorate with blanched or roasted almonds or make a press down with your thumb to make a small well in the center of the cookie. Fill with 1/2 teaspoon of jam. Put the balls on a baking sheet and bake for 15-20 minutes or until slightly firm. Allow to cool and store them in a airtight container.
